My husband tried his luck as well...
He used Quinoa for the base
Ingredients
For the Quinoa
1 cup organic quinoa
2 cups organic chicken stock
1 cup frozen dark cherries
½ cup sauerkraut
1 tbsp olive oil
Salt and black pepper
For the Chicken
1 cup cubed chicken breast
1 tbsp peanut butter
1 tbsp soy sauce
2 tbsp date’s molasses
2 tsp diced garlic
2 chopped celery sticks
1 tbsp olive oil
½ sliced onion
Salt and black pepper
Green onion for decoration
Cooking instructions
For the Quinoa
Rains the quinoa in cold water
Dry the quinoa
In a pot bring the quinoa and chicken stock to a boil
Add salt and pepper for taste
Reduce to simmer and cook till fork tender
Mix in the frozen cherries and the sauerkraut and let it
cook for few more min’s
For the Chicken
Marinade the chicken breast with the dates molasses, olive
oil and peanut butter and let it rest for an hour
Mix all the ingredients together
Add the olive oil to the hot wok and stir-fry for 10 min’s till
the chicken is cooked
Put the chicken on a bed of the cooked quinoa and sprinkle
with the green onions
