The Chopped Challenge

We love to cook and one of our favorite Magazines is Food network magazine.
This month the magazine challenges the readers with Chopped competition. 
You have to create entrée from chopped mystery basket - peanut butter, chicken breast, sauerkraut and frozen cherries. 
The winner will win $1000 gift card to food network store!!!
So, I rolled up my sleeves and get into my kitchen (-: 


For the Rice:
1 cup Jasmine white rice
2 cups organic chicken stock
1 tbsp olive oil
Salt and black pepper 
Chopped green onions 

For the Chicken:
1 cup cubed chicken breast 
1 tbsp peanut butter 
1 tbsp soy sauce 
2 tbsp dates molasses
2 tsp diced garlic 
2 chopped celery sticks
1 cup sauerkraut 
2 tbsp olive oil
 ½ cup frozen dark cherries
½ sliced onion 
3 sliced mini sweet peppers (red, yellow and orange) 
Salt and black pepper
Green onion, roasted peanuts and shredded carrots for decoration

Cooking instructions:

For the Rice:
In a pot bring the rice and chicken stock to a boil. Add salt and pepper for taste. Reduce to simmer and cook till fork tender.  Mix in the diced green onions. 

For the Chicken:
Marinade the chicken breast with and all of the other ingredients and let it rest for an hour. Add the olive oil to the hot wok and stir-fry for 10 min’s till the chicken is cooked. 

Put the chicken on a bed of the cooked rice and sprinkle with the green onions, the roasted peanuts and shredded carrots.
